Esther V (Gunderson) Peterson was born on March 21, 1924 to Arthur and Hanna Gunderson, the third child and second daughter. Esther grew up in Clearbrook, Minnesota, where she attended school and was the first in her family to graduate high school, a wonderful accomplishment at the time. It was during this time that Esther would meet her sweetheart Russell Peterson and they would later marry in 1946.
During the early years of marriage the couple moved to various parts of the country searching for employment. Russell found construction work overseas and traveled to Africa, Vietnam, and Greenland, while Esther and her two small children settled in Forada to be close to family while he was away. Patricia and Lee enjoyed life with mom while dad was gone for extended lengths of time. In 1960, Russell returned home for good and the family, along with their third child Boyd, moved to Starbuck Minnesota and opened up Peterson's Café. Esther was up every morning by 4a to do the daily baking for the restaurant and spent the rest of the day cooking, cleaning, and serving. The Peterson Café was a staple in the Starbuck community for almost 10 years. After the graduation of Patricia and Lee from Starbuck High School, the couple along with Boyd moved to Montevideo Minnesota where they owned and operated a Montgomery Ward store until their retirement.
Russell and Esther enjoyed the next 18 years living part time in Minnesota and spending the winters in Mesa Arizona where she enjoyed spending her time reading, knitting, crocheting, and baking. After Russell's death in 1996, Esther called Glenwood home until the time of her death.
Esther died on Saturday, April 23, 2016 at Hennepin County Medical Center in Minneapolis, Minnesota. She lived to 92 years.
She was preceded in death by her husband Russell, her parents, brothers Norman, Russell and Mickey and her sister Mildred, and her son in law Robert Aaberg.
She is survived by her children, Patricia (Gary) Leedahl, Lee (Marcy) Peterson, Boyd Peterson; her Grandchildren Shannon (Kevin) Boe, Christopher Peterson, and Michelle Peterson; and her Great Grandchildren Courtney Boe and Zachary Boe.
In lieu of flowers the family prefers memorials to Minnewaska Lutheran Home in Starbuck and the Indherred Lutheran Church Cemetery Association.
